Looking for a homemade eggnog recipe that isn't raw? This eggnog is spiced and smooth and delicious!
With store-bought eggnog I can either take it or leave it. But it does taste like the holidays and making it yourself makes it so much better. It's rich and smooth, perfectly spiced and doesn't last long in my house.
This recipe does not add spirits but you most definitely can. Most eggnog is spiked with white rum but vodka or even Kahlua would work. Add after everything has cooled down or when you make your drink. Throw in some cinnamon sticks too - they look super festive and make perfect stir sticks.
Ingredients
2 cups whole milk
1 cinnamon stick + garnish or ground for topping
1/2 tsp nutmeg
1 tsp vanilla extract
6 large egg yolks
1/2 cup granulated sugar
1 cup heavy cream
Step 1: Whisk milk, nutmeg, vanilla together
Use a medium sauce pan over high heat
Step 2: Low boil
Add the cinnamon stick and bring to a low boil, should only take a few minutes
Step 3: Whisk eggs and sugar
While your saucepan is coming to a boil, whisk the egg yolks with the sugar in a large bowl until pale yellow
Step 4: Add hot milk to eggs
Scoop a spoonful at a time and mix well in between
Step 5: Back to the stove
Return the eggnog back to the saucepan and put back on the stove over medium heat until it starts to thicken and coats the spoon
Step 6: Add heavy cream
Remove from heat and mix in the heavy cream
Step 7: Bottle and cool
This will make about 2 mason jars worth and will take a few hours to completely cool down, consume within 3 days if it lasts that long
